Creamy Broccoli Soup
3 bunches broccoli, cut in small florets.
4 onions
1 head garlic
3 zucchini
4 carrots
2 stalks celery
2 white potatoes
1 box mushrooms
1 bay leaf
2 cubes frozen basil
4 cubes frozen parsley
4 tsp salt
black pepper to taste
Combine broccoli, onion, garlic, zucchini, carrot, celery, potatoes and mushrooms in 10 qt pot and add then add water until it reaches 2 inches below top of pot.
Cook for 30 min. covered, on med. heat.
Add bay leaf, herbs, salt and pepper.
Cook another 15 min. or until veg. soft.
Blend in pot with immersion blender.
Serve hot and enjoy!
